Located on Place de la Canourgue, in the heart of the old town, this listed building was once the private mansion of Pierre Richer de Belleval, physician and botanist to King Henri IV. It took three years to restore the building to its former glory, and today it houses a 5* hotel, a gourmet restaurant with a Michelin 2022 star, and a contemporary art foundation.
In terms of gastronomy, the establishment has revived the Pourcel brothers’ former Michelin-starred restaurant, the “Jardin des Sens”. The menu emphasizes local and Mediterranean cuisine, while drawing subtle inspiration from the two chefs’ five years of travel and encounters.
